The first step from our producer is to record the data of the delivered raw material in accordance with regulations for organic products.
Lucuma Fruits Cleaning
This is followed by a manual and visual initial inspection. The Lucuma fruits are freed of impurities by hand and at the same time sorted according to degrees of ripeness, quality and color. Then the fruits are placed in a water bath where they are cleaned.
The subsequent disinfection serves to kill microorganisms. To do this, the Lucuma fruits are stirred constantly and disinfected in a water bath (50 litres of water + 10 ml of organic citric acid).
Peeling, drying, grinding
The Lucuma fruits are peeled manually, the pulp cut into approx. 5 mm thick slices then laid out on platters and dried for approx. 8-9 hours.
The so-called "ozonification" (conversion of oxygen into ozone) is a natural, gentle process in which the powder is cleaned again.
Sieving, packaging, storage
In the last production step - the sieving plant - the desired consistency of powder (very fine to coarse) is determined by our producers. A final microbiological analysis guarantees the purity of the product before it is filled into 5 kg polyethylene bags. The Lucuma powder is stored in a cool, temperature-controlled storage room to be transported to the customer.
